Kalavara was built to bring the real Kerala table to Bahrain — not a simplified version, but the full tradition. The slow-dum biryani sealed under a dough-lid and steamed for forty-five minutes. Karimeen pollichathu wrapped in banana leaf and fire-roasted. Appam lifted off an iron pan the same morning. Sadya laid out course by course on a fresh leaf. Every technique, every masala blend, drawn from the Malabar tradition that shaped Kerala cuisine across centuries.

Short-grain rice layered with fried onions, saffron-milk, ghee and mint. Sealed under dough and steamed for forty-five minutes. Opened at the table — never in the kitchen.
